Salmon Cake

Crispy on the outside, moist on the inside! Homemade Salmon Cakes.
Ingredients
200 ~ 250g fresh salmon
1 medium potato, boiled and mashed
1/4 onion, finely chopped
1/5 carrot, finely chopped
1 tablespoon chopped parsley or dill
1 egg
1/2 cup breadcrumbs
1 tablespoon lemon juice
Salt and pepper, to taste
Olive oil, for frying
Step 1
Flake the salmon using a fork or knife. Place it in a bowl along with the boiled and mashed potato.
Step 2
Add the chopped onion, chopped carrot, herbs, egg, breadcrumbs, lemon juice, salt, and pepper. Mix everything together until well combined.
Step 3
If the mixture is too loose, gradually add more breadcrumbs to help shape it.
Step 4
Shape the mixture into round cakes using your hands. Heat olive oil in a pan over medium heat and cook the cakes for about 3–4 minutes on each side until golden brown.
Tip
If the mixture doesn't hold together well, try adding another egg or adjusting the amount of breadcrumbs.
For an even more delicious dish, serve with a rich tartar sauce or fresh lemon aioli.
