Salmon Soup

A harmonious blend of salmon and vegetables melting into a warm, comforting broth.
Ingredients
200g salmon fillet ( preferably center cut ), cut into small pieces
1/2 onion, 1/2 carrot, 1 celery stalk, finely chopped
1 potato, diced
500ml fish stock or water
1 tablespoon olive oil
Salt, pepper, and a pinch of thyme or dill
Step 1
Heat olive oil in a pot and sauté the chopped onion, carrot, and celery.
Step 2
Add the diced potato and salmon pieces, then pour in the fish stock or water and bring to a boil.
Step 3
Once boiling, reduce to medium heat and simmer for 15–20 minutes until all ingredients are tender.
Step 4
Season with salt, pepper, and herbs to taste.
Tip
Don’t overcook the vegetables, keep them slightly crisp for better texture. Add a splash of lemon juice at the end for a refreshing finish.
